During the summer time, I like cool-ish foods a whole lot - like summer rolls. These I made with balsamic grilled chicken, snow peas, red bell peppers, onions & raw spinach. They are perfect for bentos - so portable! You'll be seeing them quite often here!

This looks absolutely yummy - what kind of wraps do you use?
Hiya! They are Vietnamese rice/tapioca spring roll skins. They come in triangle and round shapes. I use the round ones. The packages usually say Banh Tranh no matter the brand.
They come hard and need to be softened with cold or warm water to make them pliable.
