Chicken with Capers & Roasted Bell Peppers - 325 calorie Bento

I love the flavor that capers add to any dish, specially poultry. You don't have to use salt when you use the bottled capers - the brine they are packed in contribute more than enough salt to any dish.

  • Champagne Grapes (50)
  • Babybel Light (50)
  • Mini Peppers (7)
  • Chicken with Capers and Roasted Bell Peppers (148)
  • Carrot/Potato/Broccoli Stem Medley (70)

Total Bento = 325 calories


(yields 1 serving)
1/2 Chicken Breast - Meat Only - Cut into bite size pieces
1 Tbsp Capers (without brine)
1/4 cup Chopped or sliced Onions
1 oz Roasted Red Peppers
Mrs. Dash Chipotle Seasoning
Olive Oil Spray

Season chicken with Mrs. Dash seasoning.
Spray pan with olive oil spray.
When hot, add onions and cook until translucent.
Add chicken and cook through.
Add Roasted peppers and capers. Cook for 3-4 minutes, stirring constantly.
